It was barbecue time and I wanted to contribute by bringing along dessert. I’ve never been a brilliant cook so a ‘no bake’ recipe was just right for me. The fact that it went down well ( lots of compliments and oh’s and ah’s ) inspired me to share the recipe with you.
You’ll need;
400g unsalted butter
200g golden syrup
100g cocoa powder
200g raisins
800g digestive biscuits
First place the digestive biscuits into a clean food bag, seal and gently crush using a rolling pin. I had a mixture that ranged from fine crumbs to 1cm pieces. Pour the crushed biscuits into a large heat proof bowl, add the raisins too and mix well.
In a medium pan add the first 3 ingredients and warm up gently until the butter has melted, stirring all the time. Turn off the heat then pour the syrup mixture onto the biscuits and raisins. Mix them well, it might look a little dry but it will be okay.
When you have mixed it thoroughly lightly grease two medium baking tins ( Pyrex trays will do ) and spoon the mixture into them. Cover the mixture in the trays with cling film or greaseproof paper and compress the contents gently with the palm of your hand. Place in the fridge and leave overnight.
When ready to serve cut them into squares or bars. They are lovely on there own or with ice-cream. Enjoy!
